Gourmet DIY The Fairy Tale Diet Way 3 of 5

Some people are meat lovers, others fish or fowl… but I love the power of vegetables!

With all this cold weather moving in I figured this would be the perfect time to cook up a nice pot of hot, delicious vegetable soup.  This program lends itself to this chore easily!

My DH loves coming home on snowy days when the house is blanketed under white fluff, opening the door and be wrapped in the alluring fragrance of this soup we are sharing with you today.

The Fairy Tale Diet only uses certain veggies, but they can be mixed dozens of ways, although we are using them in this soup, you could even toss in beans, salmon, tuna, chicken or turkey, or all at the same time… just not today!

Let me tell you why we chose the veggies we did:

Broccoli, Zucchini, Green Beans and Celery are America’s favorite vegetables because they tastes good and are available all year-long in one form or another. They are a rich source of vitamin A, vitamin C, and bone-building vitamin K, and have plenty of fiber to fill you up and help control your weight. Many people know that beta-carotene (vitamin A) is not just found in orange and yellow vegetables, but that broccoli is an excellent source. You can eat all four of these vegetables raw, lightly steamed, stir-fried, roasted, boiled or grilled. Eat them as a side dish, or tossed into noodles, egg dishes, soups, and salads, a minimum of 2 servings every day.

Sweet potatoes or Yams are yummy members of the dark orange vegetable family, and they lead the pack in vitamin A content. Substitute a baked sweet potato, which is also loaded with vitamin C, calcium, and potassium for a baked white potato. Instead of adding butter or sugar, try Walden Farms Maple Syrup or their Marshmallow Dip, or taste the sweetness that develops when a sweet potato is cooked — and think of all the calories you can save by not loading it with all that fatting butter and sour cream.  Also avoid the salt! If you eat more foods like sweet potatoes that are rich sources of potassium, and fewer high-sodium foods, we can stop or radically slow down the effect of sodium on blood pressure and reduce bone loss. The other dark orange vegetables you can substitute into this diet at least twice a week include pumpkin, carrots, butternut squash, and orange bell peppers.

By eating our ‘manna’ vegetables and fruit you will be getting essential vitamins, minerals, fiber and phytonutrients (plant-nutrients) that your body needs to promote good health. Toss some in a blender and make them into juice.  If you want to punch the flavor try adding any of Walden Farms dressing. That makes it so easy to get these key vitamins and nutrients in one delicious drink. Every 8 ounce glass of vegetable juice equals one serving in the Fairy Tale Diet.

As you grew up you may have been told to eat your greens, but what about your  oranges?

  • Collagen helps provide structure to our bodies, and connects soft tissue to our bones. Vitamin C is needed to make collagen in the body.

 

As one that suffers from Fibromyalgia, I believe everyone else with it should absolutely be getting at least the minimum required amounts of vegetables, in my humble opinion of course.

As for those of us with heart problems…

  • Low sodium dishes is heart-healthy, we try NOT to use any added salt!
  • Vegetables are an excellent source of potassium
  • Naturally fat and cholesterol free, vegetables are the way to go!

 

We made sure that the Fairy Tale Diet has foods that are a good source of potassium and low in sodium to cut the risk of high blood pressure and stroke.  I am a walking example of the benefits these veggies give after having had first hand experience with those deadly culprits.

Dr. Ben Kim, of Juice Advisor,  is regularly about the fastest and easiest way to get healthier. Without hesitation he says vegetable juice. Dr. Kim studied at the University of Toronto then went on to earn his doctor of chiropractic degree at National University of Sciences in 1997.  He proudly graduated summa cum laude, and joined multi-disciplinary clinics in Alaska, California, and Ontario.  Today, he lives and works in Ontario, Canada with his family.  He also is devoted to spreading the secrets that the diet industry does not want you to know.

The late Jack LaLanne was among the first to dispute the propaganda of the diet industry and tried to convince the public for decades that healthy eating was the way to a long life, not packaged or chemically treated foods.  He advertised his ‘Vegi-matic’ for juicing before it was ever popular to juice!  He was an American fitness, exercise, and nutritional expert, celebrity, lecturer, and motivational speaker who was widely referred to as “The Godfather of Fitness”. He was quoted with the following statements:

  • Your waistline is your lifeline.
  • Don’t exceed the feed limit.
  • The food you eat today is walking and talking tomorrow.
  • Ten seconds on the lips and a lifetime on the hips.
  • Your health account is like your bank account: The more you put in, the more you can take out.
  • It’s not what you do some of the time that counts, it’s what you do all the time that counts.
  • Eat right and you can’t go wrong.

We all know someone who is sold out on eating healthy… and we turn a deaf ear to them, as if they were preaching the word of G*d. It is too true!  These two great believers are/were right!

I do not even deserve to walk in their shadows but I believe just as strongly as they.  Conviction is what motivates anyone to success!

Look at it this way: If you are overweight, you did it to yourself.  No one held you down day after day and shoved poisonous amounts and types of food down your throat! 

If anyone had even attempted such a thing you would have been kicking and screaming!

Start mentally kicking and screaming at yourself.  Stop what you are doing… walk away without a backward glance… say goodbye forever to that person, that lifestyle and break clean, once and for all!!!!

Go in the kitchen, your desk drawers, your purse and coat pockets, and everywhere else you have stuffed any kind of food that is not on the Fairy Tale Diet and toss them into a box… and either toss them in the garbage or give them away!

Then, if you are not too upset with my up front, in your face, attitude, (and I do not apologize, ‘cause it’s for your own good) make yourself a cup of tea, broth, soup, anything liquid, warm and good for you, slowly sip it and join me as we make positive healthy changes… together!

Today the weather is yucky. When the rain or snow is falling outside I just love to curl up on the couch, with a good book, or a classic ‘tear jerker’ move (Jane Austin books and films are my favorite) while sipping on a hot, delicious cup of tea or soup.  The versatility of soup is wonderful.  The FREE RECIPE for today can be tweaked with the noodles, beans, fish or fowl. You can add more or less of each veggie to soup your taste.  At Walden Farms you can try every different dip, salad dressing, pasta sauce, barbecue sauce or anything there that calls to you!  Some times it is nice to just have a plain and simple, yet delicious cup of soup. That is what we are making today. I just love it! 

Soup

  • 1 cup of orange bell peppers, diced
  • 1 cup of broccoli, chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 zucchini, diced
  • 1 cup celery, diced
  • 1 (14.5 ounce) can green beans
  • 1 pinch ground ginger
  • 2 cloves garlic, crushed
  • ground black pepper to taste

Directions

  1. In a large stew pot, over medium heat, toss in all the vegetables, with their water and an extra 4 cups of water. Season with ginger and pepper. Reduce heat to low and let simmer 1 hour or stir until the carrots are tender.

Gourmet DIY – The Fairy Tale Diet Way 2 of 5

Before we focus on the promised posting…

Drum roll pleeeeease……..

This is the day I have looked forward to for so very long…

Please join me in my personal celebration!

On January 1st, 2011 I weighed in at 307 pounds!  I sat down and cried, not because I wore the biggest dress size I ever had, but because I knew what I needed to do and refused. I was literally “pushed out of shape”.

I like millions of you made that fateful New Years Resolution! This time I was in it for the long run.  I made a kind of super-duper commitment to myself, for myself, ‘till death do I part!

Today… I have weighed in at…  248 pounds! Thank you, Thank you!!!  I made it under 250 pounds!!!!

Yes! I have lost 59 pounds in 476 days (68 weeks), or 1.15 pounds per week… slow but stead proof that The Fairy Tale Diet works.

I must admit that DH has a big influence in my actions… and the fact that I have Fibromyalgia, Osteoarthritis, Hashimoto’s, Phibitus, Crohn’s, and have had high blood pressure, 2 heart attacks, a stroke, and last February was told I was boarder-line diabetic.

I have to continue on with this program. Today I received the news that I have that diabetes thing under control, have had no flair ups from Crohn’s for months and I no longer need high blood pressure meds.

Winter is upon us, with its parade of holidays and eating rituals past.  To get through them we stayed focused.  Right here, right now, I vow to cut enough calories from my intake to reach 225 pounds by August 1st, 2012. When I reach 175 pounds I will post my photo! (even if the med charts say that for my height I should weigh between 110-125 pounds.)

I will now start to give you monthly updates as close to the first of each month as I can remember…. Duh.

I will make it with your support and The Fairy Tale Diet. (I have so far. LOL) One of my favorite items in this program is the noodles. 

Let me get back on track now and tell you about The Fairy Tale Diet and those noodles:

    • The Miracle Noodles are so healthy! Available in many shapes and textures. Eat no more than 3 a day. They have no calories, no fat, and no gluten, nothing negative. They play the starring role of fiber in our diets. This noodle is made mainly of soluble fiber. Soluble fiber acts to slow digestion. By doing this, it allows for the slower absorption of glucose and is the reason behind its beneficial effects in diabetes. The soluble fiber found in the Miracle Noodle slows digestion and prolongs the sensation of fullness and is an essential part of any weight loss program. You also absorb more nutrients in the foods you eat with the Miracle Noodle due to the slowing of digestion. By replacing or supplementing at least one meal per day with these noodles you will definitely raise your needed fiber intake and dramatically lower your total calorie intake. They just may be one reason my Crohn’s’. Soluble fiber binds bile acids that are secreted from the gall bladder. These bile acids have cholesterol in them and are bound up by the soluble fiber in the Miracle Noodle and then excreted. These noodles help with diabetes because, by slowing the digestive process, there is a slower absorption of glucose, which then requires a slower release of insulin from the pancreas, which aids in the normalization of blood glucose after eating a meal. (Thus my lowered blood pressure, and my cleared diabetes report.)  The folks at Miracle Noodles are committed to providing the highest quality shiitake, konnyaku, shirataki noodles, non tofu noodles, non soy noodles, non soy shirataki to an ever-expanding market of people on low carb diets, Atkins Diet, and “foodies” looking for novelty and zero calorie pasta in their home cooking. Their shiitake noodles made from the konnyaku imo plant are of the highest quality. They have the largest selection and wide variety of shirataki noodles on the market. I am now more convinced than ever that by utilizing these noodles with the Fairy Tale Diet we have just found the best weight loss plan.
    • Beans, beans, beans!  These are sooooo good for your heart — really! Beans are super loaded with insoluble fiber, which everyone knows helps lower cholesterol, as well as soluble fiber, which gives you that fully satisfied feeling and helps rid your body of waste. They are also a very good, very low-fat source of protein, carbohydrates, magnesium, and potassium. We favor edamame (whole soybeans) because they also contain heart-healthy omega-3 fatty acids and black beans that help curb gout (which is cause by high levels of uric acid found in gourmet dishes). All beans can easily be substituted for meat or poultry as the centerpiece of a meal, but they also work as a side dish, or tossed into soups, stews, or egg dishes. The U.S. Dietary Guidelines recommend 3 cups weekly; we have doubled that to 6 cups a week.

Fish and Foul – Salmon and Tuna are the only fish on our program because they are manna foods with huge omega-3 fatty acid content. Research proves that omega-3 fatty acids help protect heart health. The American Heart Association recommends eating turkey or chicken breast or fatty fish like salmon or tuna twice weekly, we say four times a week. We have deleted shellfish, pork and beef from our program. An overall comparison, fowl is the healthiest (skinless of course). Red meat tends to be higher in saturated fat. The bottom line with turkey and chicken…ditch the skin and stay away from the wings. If you’re paying close attention to your fat intake, choose the leaner breast. The salmon and tuna are both low in calories (200 for 3 ounces) have lots of protein, are good sources of iron, and are very low in saturated fat. You can simply grill or bake them, top then with salsas or other low-fat sauces (check out Walden Farms), or serve them on top of green salads or stir-fry them into your manna veggies below.  Worried about the mercury content of the fish? (Mercury has been known to accumulate in fish.) Don’t worry! The great benefits of eating salmon and tuna three times a week far outweighs any possible risk, but if you are the least bit concerned, check with your doctor.

Mexican Seafood Paella

Our friends Hector & Theresa say: “This recipe for Spanish seafood paella is quite authentic – you will love it – any juices that we get from preparing the ingredients are reserved and used like a gravy. Being from Spain we know this dish originated in its modern form in the mid-19th century near lake Albufera, a lagoon in Valencia, on the east coast of Spain. This mixed paella is a free-style combination of chicken, seafood, beans and vegetables. What keeps it authentic are the  other key ingredients: pungent, edible, yellow, flower petals and olive oil.”
2 pkg Miracle Noodles Mini Pearls

1 can non-stick pan spray Olive oil

1 can black beans

1 can chicken chunks
1 pkg Table Vinegar
1 can salmon
1 can tuna
1 sml orange bell pepper, diced
1 sml zucchini diced
2 pkg onion flakes
2 pkg garlic
3 T Calendula Petals
1 stock of diced celery

 

1.      Spray a frying pan, break the chicken into pieces and poach in the vinegar in a large frying pan for as long as it takes you open & rinse all seafood and add all to the pan.

2.      Add the pimento, peppers, onion and garlic and fry for 1 minute.

3.      As mixture is frying, double rinse the Miracle Noodles Mini Pearls, spray Miracle Noodles Mini Pearls with the pan spray, coating them, pour Miracle Noodles Mini Pearls into a sauce pan with water, bring to simmering point and then add your Calendula petals – stir well. Remove from heat. Now’s the hard part as far as your will power is concerned  – cover (either with a lid or foil) and leave it for 10 minutesno peeping as the processing time will be extended and you might get grains of Miracle Noodles Mini Pearls that are not colored and flavored in the finished dish – so LEAVE IT ALONE.

Add the cooked chicken and seafood; stir well and cover – leave to cook for about 5 minutes. Then add the peas, stir well, cover and leave a further 5 minutes.

This amazing, delicious dish serves four people for fewer than 280 calories each in less than 25 minutes (less if you have a helper to chop the veggies)!

With flavors like this, who would ever consider this as dieting?  My DH calls it ‘Fancy –Shmancy’, but he always asks for seconds! This is Granny’s’ Gourmet DIY for the Fairy Tale Diet!

Gourmet DIY The Fairy Tale Diet Way 1 of 5

 

I do not like thee, Doctor Fell,
The reason why, I just must tell;
The basic food groups you did sell!

Now I’m fat and don’t feel well,
I do not like thee, Doctor Fell.

Can you relate to that poem?  Each of us must find whatever works for us.  We learned to do a little research and started to follow our own created diet which is a bit Atkins, South Beach, no/low carb, no/low sugar, vitamin supplemented and even includes a fabulous pasta noodle that has no calories and no carbs, called The Fairy Tale Diet!  

We took note of what Mother Goose, the Grimm’s Brothers, and other childhood poems tried to sell us over the centuries about our diet.  This five-post series will give you an overview of the finer points to how our diet came from concept to reality and works for us and it can work for you, too, without hunger or cheating! 

We noticed two points of concern.  The brainwashing we have had since childhood and the guilt always associated with breaking a ‘normal diet’.  Lets work backwards for a moment.  The oxymoron ‘normal diet’ just gets me.  If we were normal we would not need to diet… and because every diet I had ever tried before seemed just like every other… well, you get it! So, then we learn that if we cut calorie intake for more than five days our body shuts down and our metabolism goes wacky.  That is where I got this fab idea, on five off two.  We reduce our intake for five consecutive days… and break the cycle for the next two days.  Then we start all over again!  It is so simple!  Life style change for the entire family, not just for one or two members!  This is a self-leveling program… You will only lose the weight you need to lose. There is no future maintenance program… this is the entire program!  Start to finish, from now to forever… young and old, fat or skinny, from this day forward for as long as you all shall live! On five off two!  The Fairy Tale Diet!  With the selection of high vitamin and mineral content, minus the rich caloric levels, we found enough of a variety to satisfy any gourmet’s delicate nature. If you cook, and feel creative… there are unlimited directions you can take this program using just what we lay out.

What if you work split days off… or a special occasion falls smack in the middle of your five days on the program? Fine.  So what?  How long did it take you to get in this condition… and how much longer did it take you, after you finally tried everything else, before trying this program? This is a race that will take a long time to win, if you go lame (in the head) or toss a shoe, get back on the horse!  You did not hurt a thing by falling off schedule one or two days. As long as in the over all scheme of things you really make the effort to play by the rules… you will win the race!

To address guilt:  there is none!  In your two days off… indulge your cravings and then start over when the five days on begin again, because you have to, in order to reset your metabolism!  Too simple!

We then address the teachings of your youth.

Our first clue that poems, rhymes, stories and tales that children learn make a lasting impression came from asking adult friends which ones they remembered.  Most of them related to poor eating habits and almost every person was obese.

Those that loved pasta did not remember the following poem:  

 Hey, Hey the old man yelled,

While he was eating noodles,

“Don’t eat wheat or processed meat”,

as he drew sweet yam doodles.

He said a mouthful about eating gluten-free and nitrate rich, hormone injected meats as he drew Glucomannan yam doodles.

So…we have included these wonderful zero calorie, zero carb, zero fat Miracle Noodles into our menus as a staple. These noodles come in so many shapes sizes and styles and do not need to be refrigerated or even cooked!  The perfect pasta for the person that burns water or needs a delicious, nutritious meal on the table in less than five minutes!

They leave us feeling full and satisfied for hours.  Pasta finally has no guilt … these can even be auto shipped!

Then from the nursery rhymes we became more convinced than ever that we needed to cut out refined sugar and processed flour.  That brings us to Polly and Sukey first. 

These two sisters taught us that teas are good.  There are herb teas that can help raise our immune system while supporting good colon function. When certain teas, like hibiscus, are combined with certain foods that same full and satisfied feeling makes you look forward to tea time.  For a mid-day snack we use and suggest any Stevia, Splendex or Splenda sweetened hibiscus tea, with a slice of the delicious tasting Julian Bakery Carb Smart Bread (2 carbs per slice).  We only suggest you use this bread, also recommended by Dr. Rosedale.

   Sugars and starches break down in our systems to give us immediate energy.  If, or should we say, when, we consume more that our body needs on a daily basis the excess is stored for future use as ‘FAT’.  ‘More’ equates to more than 20 total trans carbs.  Parents work hard to earn the grocery money and want to see that their kids do not go hungry.  ‘Clean you plate’ is heard at every dinner table. Carbs and sugars are pushed on the public on all sides, which makes Americans ‘FATTER’ than folks anywhere else on earth.  Adults should be ‘cleaning up their acts’ in regards to what they are saying, doing, and silently expressing when it comes to food consumption!

Mommy, make me fat like you!

Ignorantly, parents and teachers still recite ‘FAT MAKER POEMS’ to our young, unaware that they are reinforcing the brainwashing. Those poems are the direct opposite of what we should be doing and not at all what our ‘FAIRY TALE DIET’ supports.  

 I bet you can recite this next one in your sleep. Lol.

I will be posting delicious, icies and slushies, and frozen yogurt dishes as soon as the weather starts to warm!  We all crave sweets whether summer or winter, they just don’t have to be filled with carbs!!  That is why I have posted several of late, to get us through the holidays.

(Did he eat himself out of house and home or was he so overweight already that they just surrounded him with whatever he wanted?)

First of all, when a child is sitting in the corner he is there either because he is being punished or he is a recluse.  He was showing off by not using his serving utensils, was playing with his food, and he was a braggart…all things considered therefore, he was NOT a good boy. 

(If he ate the entire mincemeat pie all by himself, I guess you could say he was good… good and FAT!)

By the way… who ever bakes plums in mincemeat pies?

(It’s a crying shame that most girls’ don’t like overweight boys & visa versa!)

.  The last one… Little Red Riding Hood, almost lost her life just to take a basket full of goodies through the woods to Grandma. And who in the world would want to give carbs to a bedridden, sickly, a senior citizen.  A kind and sweet heart does not mean that one should cause a potential dietary health risk to a sedentary, single, recluse.

What do the nursery rhymes and fairy tales teach us?  We accept concepts and ideas about people, foods, religions, and races… on what we hear repeatedly from those in power.

During the times slavery was around and for all those incarcerated, it was up to ‘THE MAN’ to provide your every meal.  Today you choose what to eat.  As they say… you are what you eat.  We have done the research. 

Further on in this five-part series you will learn of the hard-working “manna foods” that give you multiple disease-fighting nutrients that satisfy your hunger.  You can enjoy plenty of food without pouring on the calories, and these are mega-simple to include in everyday meals. What good is manna food that is hard to find, difficult to prepare, and the kids won’t eat?

Eaten as your everyday, happily ever after, regular diet, these foods will give you all the nutrients missing from most American diets. We Americans need to eat more fruits, vegetables, whole grains, and low-fat dairy products.  That is no fairy tale!

Even the most acclaimed experts would quickly point out that our micro list of manna foods by no means includes all the nutritious foods that could be part of a healthy diet.  They have however praised us for the simplicity of execution and success in weight loss and maintenance resulting from this all-in-one diet. Please don’t forget that portion size matters, even when it comes to healthy foods. You will take more chances when eating simply prepared vegetables, but you must take care to eat other mega foods in sensible portions. A lot of foods like nuts are very nutrient rich, however, if you overeat them you will just be packing on pounds, (unless you only eat the delicious peanut butter we suggest) otherwise you will defeat your purpose! Here are the first few foods for (on five off two) 5 days a week:

    •  Eggs make our list because they are nutritious, versatile, economical, and a great way to fill up on quality protein.  If you are Vegan, omit them.  Most studies show that if you eat eggs at breakfast daily, you may eat fewer calories during the day and lose weight without appreciably affecting cholesterol levels. Eggs also contain 12 vitamins and minerals, including choline, which is good for brain development and memory. Enjoy no more than two of them a day, at any meal, boiled, fried, poached, scrambled, or hard-cooked as a portable snack or sandwich. (Use Julian Bakery Bread).
  •  Nuts have gotten such a bad rap because of their high fat content. However, their protein, heart-healthy fats, high fiber, and antioxidant content earn them a place on our list but only if they are consumed as Walden Farms Peanut Spread. That is the key to enjoying nuts. Even though all nuts are healthful in small doses, and studies show they can help lower cholesterol levels and promote weight loss.  By eating Walden Farms Peanut Spread, an ounce a day, will help fill you up. Use it to add flavor to salads, side dishes, baked goods, cereals, and entrees or on slices of apples or sticks of celery. INGREDIENTS:

4 eggs

1/2 T Walden Farms Peanut Butter (just enough to barely taste)

PREPARATION:

Boil eggs for 15 minutes. Peel eggs and mash into medium bowl. Add mayo and peanut butter. Best served on Julian Bakery Smart Carb bread toasted or as a dip for veggie sticks.

Gourmet DIY Life-long Reduction Binge

Here is what my title says this posting is about:

A person with a discerning palate who can, on their own, for the rest of their life, cut or diminish the short periods devoted to indulging in an activity to excess, especially eating.

It is a long drawn out description of changing the way you eat, allowing for scheduled temporary breaks, with determination, for as long as you shall live!

We all pretty much eat whatever we want, when we want it, without ever a care for the future! Most of us need to learn to do this, but only 2 days a week! Reduce the binge to two days and cut the intake of carbs, calories and fat the other five days!

Think about this… most jobs… On five off two, repeated week after week, after month, after year, and if you save a pinch each payday, saving for something special… eventually you get what you so much desire.  You do not work continually without time off! And the Fairy Tale Diet is the same kind of situation. 

If you only work 5 days a week, this does not mean that you work part-time…  It is a full-time job you do for a living!  You slave 5 days a week so you can play 2 days a week. You look forward to your 2 days… thus the ‘TGIF” phrase because we know that on the next day we get to make all the calls for 48 hours, slaving for no one because that time is we spend as we see fit!   We all get to eat, drink and be merry!

Why not think about your food intake the same way?  Restrict your intake with dishes that are delicious but super low in calories for five days only.  It takes a mere 1200-2000 calories a day, depending on you body size and physical excursions just to live, just to breath, pump your heart, digest your food, blink and think. If you make your body move more than you give it fuel to sustain these activities then you lose weight.  Most of us are opposed to that idea.  The only other option is to quit stoking the fire with fuel that is going to be stored away as fat, but only do it for five days, just short of your body shutting down because it thinks you are starving.

Enter: the Fairy Tale Diet.  Come the weekend you will re-trigger your metabolic rate by eating anything your little heart desires… anything! Pizza? Go for it!  Banana Split with a ton of whip cream and hot fudge?   Breakfast out for biscuits and gravy with hash, bacon, sausage, pancakes and four eggs?  No problem!  How about some greasy fried chicken for lunch with a heaping helping of potato salad?  That’s what I’ve been talking about!  On five off two, repeated week after week, after month, after year.  You will eventually reach your goal without guilt or feeling deprived and still have a great time getting there!

You need to do what I did. You must become absolutely passionate about losing weight, to the goal of losing weight and feeling better.  No one can do this for you.  No future occasion will be powerful enough to keep you to the task.  Drug addicts, alcoholics, smokers and gamblers can all remove the cause temptation of their addictions but not us.  Our weakness is food.  We either crave it or use it to pacify feelings of neglect, abandonment, and worthlessness, or as a form of celebration or to entice with.  We use food.  We also must consume food to continue to exist.  That old saying ‘you and take a horse to water but you can’t make him drink ‘ is true.  Horses are smart. If a horse is not thirsty, does not need the liquids it will not drink. If you take the horse to water… and the water is bad, the horse will not drink… if only we were that smart.

Humans are weak.  We fall to temptation and are lured into a multitude of sins through our senses’. Eve was living proof!  We get a whiff of something that smells delicious and we go weak in the knees.  Food is our passion.  Now we need a new passion if we are to change what we see in the mirror.  Your passion about your goal keeps you committed and will assure your success.  Once you are passionate about achieving your weight loss goal, you will find the way to do it.  You will also find it easier to say no to those things that once held power over you!  You will no longer be reaching for the ‘forbidden fruit’!  Everybody’s body is different. Everybody has different cravings. Everybody that is over weight has eaten more calories than their body can burn on any given day, day after day, for a while now!   Only you can find the reason, the strength, the desire and passion that will keep you on the path to reach your goal weight and optimum size.  Above all, you must stay positive about what you are doing.  Being negative never gets you anywhere. Positive thoughts and actions, supporters and loved ones will help change your bad health habits into new positive healthy behaviors.

Just a little less than a year ago I weighed in at 307 pounds in a size 26. I am now a size 22, and heading for 250 pounds, and I smile A LOT more.  I have a lot more energy and my DH loves it!  It took me a while to face what I was doing to myself… and I decided I did not like what I saw, so… I changed; I now take care of myself. 

Join me…this site is here to tell you what I’ve learned about losing weight and being healthy.  I will give you FREE RECIPES and share the research I have found in hopes that the information benefits you as much as it has me.

Gelatin Oatmeal Mint Strawberries

THE BERRIES

2 cups oatmeal uncooked

½ cup powdered non-dairy creamer
1 cup hot water (about)
1 Large package sugar-free strawberry gelatin

THE LEAVES

1 teabag of mint tea, opened and poured on saucer

1 package of Splenda or 10 drops of Splendex

Water to moisten tea-leaves
Put all BERRY ingredients into a medium bowl. Mix together to a very thick pie crust consistency. Occasionally rinsing your hands in water makes it easier to work with the batter. Form into strawberries and place them on parchment or foil. 

People eat parsley and cilantro, and so… why not a tiny bit of mint tea leaves… they help with digestion, and add a nice flavor to our strawberries.  There are no phony leaves or stems to throw away and no sugar or frosting to add calories.  Oatmeal is a great source of fiber.

Mix all the LEAVES ingredients and then dip the stem area of your berries into the tea mixture and place the berries back on the foil.  Allow to firm up for about half and hour and then either eat or package them up into an airtight container and place in the fridge or freezer.

Makes about 36 berries. (The only calories in these delicious treats are in the oatmeal.)

PS. When done… wash your bowl and mixing spoon… but pour your tea into a cup… fill with boiling water… allow the tea to brew, leaves to fall… and relax as you lean back sipping your tea and nibbling a couple of these strawberries, and reflect on your latest culinary success!

The Truth About Dieting

Learn the truth and create your own special Fairy Tale Land.   

I am not a representative of any corporation, pill-pushing manufacturer, exercise industry not have I any thing to gain from sharing this information with you.  Sure, I might sell some of my special recipes and clearly print out step by step the way to succeed with the Fairy Tale Diet… but a mere $10 is not going to make or break you financial and it will not set me up as the next millionaires!

I am positive you have heard what I am about to say… but… do you want to lose your unwanted pounds without pills, shots or exercise and easily be able to keep it off for the rest of your life…or do you want to try starving again while you keep jogging up and down the same path losing and regaining those pounds until you drop over dead?

You already play ‘Follow the Leader’ but start following us, and quit following after the diet industry or the powers that be and gain in the wisdom, not more pounds.  The wisdom found in fairy tales: with each blog I will do my best to expose and expound the meanings, morals, and insights of the Fairy Tale Diet, how it got it’s name, and too… Big Brother’s hidden agenda. 

We started doing the research and laying the boundaries for our Fairy Tale Diet in mid February 2009.

‘The Powers That Be’ (TPTB) do not want the public to know the truth about many things, dieting is just one*.

We could purge obesity, famine, poverty and disease from the world within the shortest period but ‘they‘ will not allow it to happen.

‘They’ call those of us who speak out “Lunatics, Dreamers and Discontents” and fein concern for the changes we so long for, but fear and power guides them.

We decided that if ‘TPTB’ continue to refuse to help the populous, we can not stand wringing our hands nor keep silent one more second on what we know can help.  Woe to any who prevent us.

‘ TPTB’ know they are poisoning our food with chemicals, hormones and more in the name of progress and for the all mighty dollar*. Do your best to buy all of your food from health food stores or grow your own.  You will have a better chance of getting uncontaminated food.

Use herbs not prescriptions for pain and healing*.  The medical field and pill producers are in the money because they never really heal anyone… Think about it… If you get a cold it takes a week or two to get over it if you do not go to the doctor for his pills…. and if you do go to the doctor for his pills …  it takes a week or two to get over it… huh?  Yeh! 

Advertising:  Prepackaged lunches, dinners and more are touted as the answer for the busy family.  Stop buying those tempting items that are packaged, prepared, starches, sugars and any items containing wheat or alcohol*.  These items are addictive and low in nutrition to boot*.  ‘ TPTB’ spend millions on advertising these types of products knowing that those items have little to no redeeming nutritional value and are filled with wheat, sugar and starch… to dull your mind and body… keeping the public docile and fat, and sickly*!  Notice the programs on TV for children… in the back ground you almost always see boxes of cookies or cereal, bags of chips or a cake… and then ‘TPTB’ advertise those same sugar and starch filled items to our children on the commercial breaks*. Have you ever noticed that a 6 pack of beer is cheaper than a 6 pack of 100% fruit juice, and that soda pop is cheaper than bottled water?

PILLS and SHOTS:  Diet pills are a ‘come on’… no one wants to live on pills forever… thus the after diet binging that leads to yoyo diets also leads to bigger size clothes every year or two*.

Many movie stars, models, sports heroes and business execs have touted the benefits of a machine or gadget, pill or diet farm that promised to end your weight problems FOREVER!  Forget it! They lie! 

They are designed, for the most part, to set you up for failure*.  The industry wants you to depend on these as an addiction*.  They know full well that the pills and shots will not continue to work in the long run*.  Increased doses are likely and that you will surely regain all the weight that you lost and half as much more.  This will send you back to buy more or strong ones in hopes that the cycle can finally be broken and that you might meet your goal*. They depend on this yoyo syndrome to stay in business.  One might even think of ‘TPTB’ as glorified drug dealers*.

EXERCISE: I am not telling you that we do not need to exercise, because we do need to keep in shape. We need to keep active and tone our muscles so they do not atrophy from being a sedentary populace.   What I am saying is that in the long run it does not amount to a hill of beans if you exercise and cut calories at the same time.  Do not double stress out because of trying to regulate your new eating habits AND sweat yourself into a heart attack… I have stood in this concept from my youth and am finally vindicated in my soul and yet sound stand on the matter!  Millions of dollars are spent each month on apparatus that boast weightless promises to help you lose pounds and inches.  They produce data about how the body responds and even have a few folks to testify that the products are working for them.  There may be a fast one line statement about eating healthy but… they NEVER tell you about the exact amount of cut calories or describe the restricted, limited dietary menu that their representatives are using with the apparatus.  Exercise is a come on… and does NOT help in the long run with weight reduction.   Remember that I have said we have hard proof?  MSN posted an article on-line by a doctor, Karen Collins, R.D., that finally tells us that the test results are in and that after a year there is no physical difference in the folks that faithfully exercised along with restricting their caloric intake and those that only dieted and never broke a sweat. WEIGHT PROGRAMS LIKE ‘THE WATCHERS’ AND ‘THE JENNY’S’ THAT HAVE DIET FOODS SHIPPED TO YOUR DOOR and THE RESIDENT ON SITE PRISON FAT FARMS: Those very expensive programs may help for a while, as long as you are in resigned to following their regime, continue to only eat what their program demands and don’t ever cheat*.  They chose your foods for you, your serving sizes and sometimes even the time of day that you may eat.  They can be so restrictive that you feel like you are either in prison with a Food Cop watching your every bite or you are in a total emotional mess because you have committed all that money and time to a program you absolutely hate! The minute you return to the real world, eating as you please, even if only for a few days, you will, guaranteed, begin to regain what you have lost and then some!  There is a better way… but you still have to follow a few simple rules. That is true about every program out there, including this one!  (However with the Fairy Tale Diet you are supposed to break the metabolic chain (or cheat, as you must)… and then return!  With the other programs there are no regulations for a person to be able to straddle both sides of the fence. ‘TPTB’ call our way of living nonsense! We call it a Fairy Tale Diet! There are NO MAGIC CURES!  However we seem to have the closest program to one.

          

Look at a few of the unsuccessful, famous folks, both men and women that have traveled that road, Oprah, Kirstie Alley and even, yes, men like John Travolta.  While they all had enough money to buy their way to lasting ‘Diet Success’… that just was not going to happen.  They were unaware of our simple little program with which we ever commoners are finding success. If only they had not bought into to the industry propaganda.

THE BOTTOM LINE:  The only program that ever works is one that makes you aware and determined to cut the amount of calories you put into your body, and to do it FOR AS LONG AS YOU BREATH*. PERIOD. The only success you will have is the one you control, that works for you and you alone are dedicated to making it a life long change*. The Fairy Tale Diet may or may not be the one that helps you to reach and keep up you weight goal*.  We pray that it is, or a variation that you may stumble upon that works for you.  The hardest part for many is remembering to order ahead and allow for order processing and shipping times to get the needed items for this program. (We reorder as soon as an order arrives.) This program works for thousands… because they can easily live it*! So what if you fall off the wagon occasionally? This program is very forgiving with built-in ‘cheating’*!  But is it really cheating when you HAVE TO CHEAT to make it work?  Try it our way… Follow the Fairy Tale Diet. Used our guideline that you can vary to crate your recipes, design meal choices and include snacking between meals as much as you want within the confines of the somewhat strict perimeters of the amazing Fairy Tale Diet*. The most important thing to remember is to enjoy the food you eat on the 5 consecutive days that you are only allowed to eat these items and to be totally self-indulgent on the 2 consecutive days a week that resets your metabolic rate*.

So with all that in mind… and getting hungry… so what shall we create today?

How about a FREE RECIPE, something everyone will call decadent and delicious and never even think the words: diet food?  (Think military: Don’t ask… Don’t tell!  Lol)

Although this is a style of what some folks call bread pudding… I just can not bring myself to call it that… once you taste it I am sure you will agree!  This amazingly delicious recipe makes a two layer cake, but DH and I can not eat that much by ourselves so we cut the recipe in half and it is just perfection!  It is not real sweet or super chocolatey… so if that is what you crave, then double those two ingredients!

   

Bavarian Chocolate Cream Crumb Cake with Strawberry Glaze (6 servings)

For cake:
1 loaf of Julian Bakery Smart Carb bread, finely crumbled (14 carbs)

1/2 cup bakers’ cocoa

1 teaspoon cinnamon

1 cup of Walden Farms Miracle Mayo

1 1/2 cups reconstituted non-dairy creamer 

30 drops of Splendex

4 large eggs (2.4 grams of carbs)

1/4 teaspoon LorAnn Bavarian Cream Flavor

For Glaze:
1 jar of Walden Farms strawberry Jam 

Directions:

Heat oven to 350 º F. Lightly spray with butter flavored non-stick pan spray a round 9-inch cake-baking pan.

Place Splendex, Mayo, water, eggs, and flavoring in a large bowl and mix well. Add the dry ingredients. Blend with strong spoon 1 minute. Stop and scrape down side of bowl with rubber spatula. Beat 2 minutes more or until well blended, scraping side again if needed. Pour /spoon into prepared pan, it will resemble rocky road so smooth the top and place on center rack of oven.

Bake until top is lightly browned and a toothpick inserted in center comes out clean, about 20-30 minutes. Remove from oven, and cool on a wire rack.

For Glaze:
put the contents of the strawberry jam into a small bowl or measuring cup and warm slightly in the microwave. Drizzle over the cooled cake.

Carb Count: Recipe Total 16.4 grams of carbs, Carbohydrates Per Serving 3.74 grams of carbs (33.66 calories per serving!)

Grannys Gourmet DIY – Be a Picky Eater

If you are a picky eater… you are not alone. If you are not… you should be! In thought, word and deed!

Picky eating is a typical behavior for many people! It is simply another step in the process of taking control of you life.  Be a grown up, be independent, and live as you know you want to!  Be in control. Be a freak about it! After all, we are talking about your life, your health, and your body!  No body else should even be considered at all.  Not your DH, Not your kids, not even your parents if you do not live under their roof!

As long as you are in good health generally, and have plenty of energy, you are most likely getting needed nutrients.
 
If you are concerned that becoming a picky eater may last for a very long time or is very restrictive, speak with your doctor.  Diabetics are picky eaters that must be so for a lifetime… we are also in a health crisis and should address all of our future dietary needs as such!

Many people are hesitant to try new foods or even attempt to give a new diet half a chance!  It is completely normal to reject foods you have never tried before. Losing the foods that have poisoned your body but delighted your taste buds is also hard.  Finding tradeoffs that will bring a smile to your lips without pounds to your hips is so important! Mourning the loss of favorite foods as you enter the presumed wasteland of dieting is sooooo foreboding!  Granny knows! I have been there… we all have.

These reactions are leftover insights from our terrible twos… yes, from a period when non-verbal feelings and actions were ingrained into your memory regarding those things that you wanted to do that were forbidden and blocked at every turn and the actions you did not want to do that were physically thrust upon you!

What can you do to break that old scripting and get yourself to try new foods?

Face and accept the original reasons you felt and acted in this way!

Small portions have big benefits. Try small portions of new foods, you may enjoy them. Take small tastes at first and be patient with yourself. When you start to develop a taste for your new foods that support your new way of life you will be finding and experimenting with many new recipes, and that will make it easier to plan delicious and healthy family meals.

Listen to what you say and do to yourself and others about food.  Watch how you react.  Be a good role model by trying new foods yourself. The most positive way possible, orally describe the taste, texture, and smell of all new foods and recipes.  You may be the only one listening but… what we see, taste, smell, touch and HEAR… make a huge impact!  That new food or recipe may become your very favorite if you just give it a chance!

Introduce only one new food item or recipe variation at a time. Serve something that you know you like along with the new food. Starting your dream of a new lifestyle in dieting with too many new foods all at once is often too overwhelming and has been the cause of folks tossing the dream out the window.

Taking a taste of that new food first thing will set the mood for the meal! Right at the beginning of a meal, when you are the most hungry, take a long slow smell of the food just before you take a bite… close your eyes while you give it your full attention and think positive! Do you like the fragrance?  Does it call to you? Do you like the texture? Is it seasoned to your liking?  Does it need more or less of something to make it ‘perfection’?  Is it delicious? Others around you, if they see you doing this, will have one of two thoughts.  They will think that either you are praying before your meal (in that case the will not say a word most of the time) or they will think you are truly enjoying what you have just put in your mouth! (If that is the case… make that yummy hum that people make when they have just tasted something divine!) Not everything will taste wonderful… but 99% of the time it will not taste ‘icky’ either!  So do not start gagging and spitting and saying bad words!  If you just cannot stand it… then smile sweetly and in your most gracious way, and using your best manners… say… “ Well now… that is very interesting… I am going to have to remember this dish, however if I eat any more I won’t be able to finish the rest of my meal!”  The folks around you will think you just paid them a big compliment when however you were actually stating that it could make you sick!   No need for negative! Be polite to you and all that are present. 

Serve food plain to begin with if that is important to you. For example, instead of a spicy macaroni casserole, try to break down the ingredients separately like meatballs, pasta, and a vegetable. Also, you may wish to pretend you are dining in a fancy restaurant by setting out several plates of different sizes to keep the different foods separate or try plates with sections. For some of us the opposite works and serving a new food mixed in with a familiar item may be more helpful.  I did that with DH when I recently made black bean brownies!  I waited until he cleared half the plate before telling him how great they were for his gout because of the medicinal effect that the main ingredient, black beans, has in reversing the formation of crystals in gout. He thought I was teasing until I actually had to show him the recipe, the dirty blender, and black bean research on the internet!  Now he begs me to make them, saying his gout needs them, every weekend!

As the responsible caregiver for yourself primarily and your family secondarily, (yes, I do have this in the right order in this particular case) you play the biggest role in everyone’s life when it comes to eating behavior. What you say has an impact on developing healthy eating habits that not only affect that one single bite of food at the moment but also influences every bite that you or those under your dietary influence will have for the rest of their lives!

Negative phrases, expressions and reactions, as demonstrated above, can easily be changed into positive, helpful ones!

What else can you say to yourself and others that will affect eating behavior? The kid in us hears the negative memory tracks of the adults that raised us echo as we eat.  What do you subconsciously hear or repeat without being aware? If you react to negative tracks, as I have, then together we can fight those and break that chain of bondage on others. Not all eating choices that are made are the right kind of picky eating! Let’s view a list of common phrases that help and hinder healthy eating habits.

Some phrases teach us to eat for approval and love. This can lead to a lifetime of unhealthy behaviors, attitudes, and beliefs about food and about us. Instead try phrases that help to point out the sensory or vitamin qualities of food. They encourage the inner you and others to try new foods.

Instead of: Eat that for me try this is kiwi fruit; it’s sweet like a strawberry.

Instead of: If you do not eat one more bite, I will be mad try These tomatoes are filled with lots of good invisible stuff that can keep you strong, help you grow, and fights for you to stay well!

Then, phrases like these teach us to ignore fullness. It is always better for us to stop eating when full or satisfied than when all the food has been eaten. You may want to use phrases that will help everyone to recognize when they are full. This can prevent overeating.

Instead of: You’re such a big girl; you finished all your peas, try Is your stomach telling you that you’re full?

Instead of: Look at your sister. She ate all of her bananas. Try Is your stomach still making its hungry growling noise?

Instead of: Your have to take one more bite before you leave the table. Try Has your tummy had enough?

The next group implies that we are wrong to refuse food. This, too, can lead to unhealthy attitudes about food or self.  It is right to use phrases that let us know and feel like we are making good food choices, no matter what age we are.  It also shifts the focus toward the taste of food and not who was right or wrong.

Instead of: See, that didn’t taste so bad, did it? Try Do you like that? Which one is your favorite?

Everybody likes different foods, don’t they?

Offering some foods, like dessert, in reward for finishing others, like vegetables, makes some foods seem better than others. Getting a food treat when upset sends the wrong message and teaches us to eat to feel better. We all know this can lead to overeating.  Rewards of attention and kind words are better ways to offer comfort, especially if it is included with hugs and real one on one talks. Showing love and concern by spending time and having fun together is a more sincere form of affection than by buying them off with toys, trinkets, or food.

 Instead of: No dessert until you eat your vegetables. Try We can try these vegetables again another time. Next time would you like to try them raw instead of cooked or maybe cooked a different way, or maybe you can help?

Instead of: Stop crying and I will give you a brownie. Try I am sorry you are sad. Come here and tell me all about it and let me give you a big hug.

Once we started implementing this program, we were amazed at the positive reaction from friends and family about our ‘NEW LOVE’ for the food we consume, and how happy we are being picky eaters!  That is one more reason the Fairy Tale Diet works.  The food is delicious, the menus and recipes are endless and the dishes are fast and easy to prepare. My DH loves the versatility of ‘on 5 and off 2’ and sometimes gets upset because I refuse to prepare Fairy Tale dishes on those two days!!!!  (I love cooking… but I deserve a break from KP too!)

It seems that women’s work is never done…so I guess it’s time to hit the kitchen and find that FREE RECIPE for those Black Bean Brownies I’ve been talking about:

I love making these, they are so SUPER simple.  They get eaten fast (good thing too, because I’ve been told by others that those healthy enzymes and moistness of the beans, if not eaten in the first day or two, causes them grow fuzzy penicillin, that no one should eat!)

Preheat oven to 350*F and then as you go down the ingredient list, just start dumping each one into your blender and make sure you blend VERY well.

15 oz can black beans (drained & rinsed well)
4 large eggs
40 drops of Splendex
5 tbsp cocoa powder
2 tbsp strong coffee (or 1 tbsp instant coffee dissolved in 1 tbsp hot water)
1 tsp baking powder
2 tbsp Walden Farms Miracle Mayo, butter, margarine or olive oil
1 tsp vanilla

Prepare an 9×9-baking pan by spraying it with butter flavored non-stick cooking spray.  Bake for 30 minutes, or until toothpick comes out clean. Allow to cool before slicing. Brownies are approx. 2 ¼ ” x 2 ¼ ” in size.

Number of Servings: 16

Granny Gourmet DIY Holiday Survival

The good news, according to the New England Journal of Medicine, in a research study published them, the average holiday weight gain that stays with you is not 5 lbs. (as most people believe) but happily is closer to 1.2 lbs. Unfortunately, the bad news is that the weight gained is not lost during the following year. Holiday weight gain can give to an annual overall weight gain in most adults. The middle age spread perhaps? Follow these holiday-survival tips to avoid this incremental weight gain that may cause you to pack on an extra 15 lbs. in less than 10 years.

Plan it Out

This may be called the holiday season, but there are only a few real holidays during the season. In this time of giving, sharing, gathering and enjoying the company of family and friends we think of eating.  We want to be warm and fed, we think about it, dwell on it and finally your actions follow your thought patterns.

 

Plan well and pace yourself. Keep your schedule flexible and do not overextend yourself. If you do, you will not have time to plan healthy meals and get enough sleep, which are essential for weight control.

Work Tips

During the holidays, the workplace is full of fatty, high calorie, sweet goodies, such as candy and bakery items. Become a grazer but bring your own delicious Fairy Tale Diet goodies close-by. Say “no thank you” to office sweets. Occasional splurges are for special days, not for everyday. If the goodies are in sight of your desk, politely ask if they can be moved, or move them yourself. Bringing your own sweet treats such as a sugar-free chocolate pudding from Walden Farms or one of their many delicious flavored calorie free dips with some veggies keep you satisfied.

Party Tips

Focus on why you love your family and friends and the reason for the season and be a good host or guest. Never sit down to a holiday meal ravenous. You will set yourself up for a disaster. Before the affair starts, have a small well-balanced snack, such as a salad or a bowl of Miracle Noodles with one of Walden Farms lip smacking good dressings or toss down some berries and yogurt. Lingering in the kitchen or near the buffet table just makes the temptation too strong! Eat only reasonable size servings of what you really want to eat. Pass up the rest. Help the Host out by bringing your own healthful dish to pass, such as assorted raw veggies with low-calorie dip or a homemade low-calorie dessert, and then even the rum balls we will be making. From now on, when you are a guest at dinner party, ask what is being served and let your host know, on the QT, ahead of time that, for medical reason you won’t go into, you are on a special diet. If you are familiar with the menu, it will be easier to maneuver around obstacles.

(Most folks will treat you quite differently if you have food issues because of medical issues than they do just because you are on ‘another’ diet. You are not lieing. You are dieting for the health of it after all.  If they try dragging it out of you at any time… just thank them for their concern, ask for prayers of strength, and tell them you are not ready to talk about it.  We all need all the prayers of strength we can get just to get through this life, let alone dieting in the holiday season!)

Trade-offs for Holiday Meals

When it comes to holiday meals, there are usually plenty of options. Attempt to make better choices without denying yourself. Your waistline and your heart, will thank you. Munch on raw vegetables with low or no-calorie dip, grilled veggies and other low or no-calorie hors d’oeuvre. Trade in candied yams for the 3-bean salad, and skip the sauces. Fill your plate with delicious lean fowl, lots of veggies, and fruit. Enjoy one glass of wine with your meal if the host insists and keep your dessert small, in fact consider sharing it. Remember, in your new life, to control those portions.
Holiday Diary

Keep a journal. Make this your new tradition.  Nightly remember to record all the wonderful things you did, places you went, people you saw, gifts you received, and most of all… the food you ate. It keeps you honest and discourages impulse eating behaviors. Seeing what you’ve eaten, in black and white, is a deterrent.  It also helps a refresher when it’s time to send out thank you’s and reminisce next year.

Let’s cook…

As I mentioned earlier, Rum balls are a classic winter holiday treat and are very easy to make. They need no cooking, no equipment other than a bowl, something to mix with and some measuring tools, but no hard–to–find ingredients. If you prefer bourbon or another flavorful liquor to rum, go right ahead and alter the FREE RECIPE to suit your taste.

Many consider rum balls to be a classic treat in the winter. You never know when the last-minute invitation will pop up and you will need that hostess gift or when you will suddenly need a present. Make up several air tight tins or small-decorated mason jars, cover the lids with holiday paper, tie on a bow and with a dozen or two rum balls inside, (kept in the fridge until needed) you’ll have instant gifts.

And with rum balls in hand, you’re ready to attend any holiday party or even to throw one of your own.  I will be serving these again myself this year at our Winter Potluck… it will be the week before Christmas.  Last year we cooked it all, decorated it all, and paid the price financially, physically, mentally for it all.  Live and learn.  Learn I did, when the electric bill came in… well… all I can say is now it’s a potluck affair and the ladies in attendance help with the decorations. I truly thank the Lord for understanding friends!

The rum flavor is light, and it is not too sweet.  The texture is reminiscent of a fig Newton, but only one or two is required to dull that sweet tooth without much pain. Lol.

Ingredients

1.      1/2 cups saltine cracker crumbs

2.      2 cups oatmeal

3.      2 tablespoons cocoa powder

4.      1 ½ cups water

5.      1 tablespoon LorAnn’s rum flavoring

6.      1 tablespoon instant coffee

7.      40 drops of Splendex

Make the Rum Balls

o        Remember to make your rum balls a few days before you want to serve them.

1.      In large bowl combine all dry ingredients.

2.      Mix the rum, water and Splendex in a cup first and then pour into the dry ingredients and knead into a sort of dough.

3.      Spray your hands with non-stick buttered flavored pan spray and form the dough into 1-inch balls, allow to sit uncovered for 1 hour.

4.      Place the balls in an airtight container and store in the refrigerator at least a couple of days before serving or up to 3 weeks in the freezer.

Recipe yields about 3 1/2 dozen rum balls. (I made 2 gifts and still had a few for guilt free nibbling!)
